Craft Beverage

The sector at a glance

Craft beverage is the licensed production of alcohol at independent scale — breweries and brewpubs, distilleries, wineries, cideries and meaderies — plus the taprooms and tasting rooms where most of them make their margin. It is two businesses bolted together: a regulated manufacturing operation governed federally by the TTB and at state level (in Texas) by the TABC, and a direct hospitality operation selling pints, flights, bottles and club memberships to visitors. The economics diverge sharply between the two. A barrel sold through a wholesaler nets a fraction of the same barrel poured in the producer's own taproom, so permit type, on-premise rights and to-go rules dictate the business model more than recipe or brand ever will. Buyers and readers are founders, head brewers and winemakers, taproom and hospitality managers, and the visitors planning a Saturday on a brewery crawl or the Hill Country wine trail — searching by place, by what they can taste, and by what the rules let a producer sell them.
